A white, odorless crystal. Also known as sodium salt of citric acid. Uses: In photography, in medicine as an anticoagulant, in ice cream to keep fat globules from sticking together, as a buffering agent in soft drinks, and as a sequestering agent in detergents and soaps. CAS# (68-04-2)
